Oita Prefecture, known for its famous Beppu Hot Springs, also has an ideal climate for growing shiitake mushrooms. The mountainous regions of Oita experience a large temperature range between summer and winter, with high humidity and even snow during the colder months. These conditions make it perfect for cultivating thick, aromatic shiitake mushrooms. Among them, the Donko Shiitake, harvested at the end of winter through early spring, is especially prized for its rich umami and flavor. These mushrooms are commonly used in simmered dishes, soups, hotpots, and as a base for flavorful broths.

However, we’ve heard from many customers that while Donko Shiitake makes for excellent dashi (broth), preparing it by soaking the mushrooms for hours can be a bit inconvenient. To address this, we are excited to introduce our Premium Japanese Dashi with Oita Donko Shiitake Mushrooms. This dashi pack contains not only the finest Donko Shiitake from Oita, but also a blend of natural ingredients sourced from across Japan, carefully selected by our shop manager. How to Use
Making authentic Japanese dishes has never been easier. Simply place one dashi pack into water, bring to a boil, and simmer for 2-3 minutes. Use this dashi as a base for soups, hotpots, and various other dishes to enjoy the taste of high-end Japanese cuisine at home.

Usage Guidelines

  1. For clear soups, oden, or hotpot: Use 1 pack in about 600ml (3 cups) of water.
  2. For miso soup: Use 1 pack in 600-700ml of water (reduce the amount of miso).
  3. For simmered dishes: Use 1 pack in 300-400ml of water.
  4. For soba or udon broth, or chawanmushi: Use 1 pack in 300ml of water.
  5. For tempura dipping sauce or rice dishes: Use 1 pack in 200ml of water or 1.5 cups of rice.

Feel free to adjust these amounts to suit your taste.
