It's pre-processed Japanese green tea for easy roasting of hojicha at home. The tea leaves used are first-grade tea from Mino Shirakawa, the highest tea producing area in Japan. Unlike the second-grade tea leaves usually used, this tea has the best aroma and taste. Please enjoy freshly roasted hojicha by air frying in a frying pan.

This is the raw tea before roasting of our flagship product, ZENJIRO Hojicha Mino Shirakawa. A new special edition product has been created to commemorate the 450th anniversary of Kuroda Kuhei.

Use the precious Mino Shirakawa tea, which makes up only 0.1% of Japan's production, and roast it yourself to make your own hojicha. Simply dry roast it in a frying pan.

The trick to dry roasting is to watch for the smoke to rise and the tea leaves to turn brown. After turning off the heat, it is easier to time the pan to cool quickly to prevent the residual heat from further roasting. Don't forget the exhaust fan.

Once you get used to it, you will be able to make shallow roasted or deep roasted hojicha to your liking. The charm of hand-roasted hojicha is the fragrant aroma of freshly roasted tea.

It can be enjoyed either hot or cold. For mizudashi, it is best to add room temperature water and brew slowly in the refrigerator for one hour. For warm brewing, brew with hot water at 90°C (90°F).

I honestly can't tell the difference!

You can actually drink it as sencha without roasting it yourself. The only difference is the final step in the process, but I honestly can't tell the difference!
