Mygurt, rice yogurt. 100% plant-based ingredients. Plant-based lactic acid bacteria and yeast that naturally occur in rice. Fermented slowly under extremely harsh conditions of low temperature and low oxygen for the bacteria. After carefully determining the balance of lactic acid bacteria and yeast, flash-frozen and freeze-dried at the optimal timing.

"Ikiteiru" Mygurt is a product based on the fermentation method of "Kimoto-zukuri". It is positioned as a traditional Japanese fermented brewed food. In particular, we focused on the activity of the bacteria in the early stages of fermentation in "Kimoto-zukuri". This is because, if we were to compare it to a human being, it seemed to overlap with the period when a fertilized egg implants in the mucous membrane of the uterus, grows as a fetus in the mother's amniotic fluid, survives the evolutionary process, and becomes a three-year-old child. Born to a healthy woman with clean blood, and born to a mother living in a mentally stable environment with a diet mainly consisting of vital grains and traditional Japanese fermented and brewed foods, and blessed but never spoiled, the child grows strong both physically and mentally, and the future possibilities of this child are infinite. "Ikiteiru" Mygurt was born as a result of observing the bacteria (bacterial flora) during such a very important period. The raw materials are rice and rice koji that are full of vitality and are as suitable for natural fermentation as possible without relying on pesticides or chemical fertilizers, and natural water that springs up from underground. The bacteria derived from the raw rice awaken in natural water, and first the nitrate-reducing bacteria emerge and begin to function. Lactobacillus bacteria then appear, and are allowed to remain active for a long period of time (about one month) in a harsh (2-3°C) environment to foster a strong life force. Through this fermentation and aging process, the bacteria contribute deeply to our health and acquire various possibilities. During this time, we have been working on product creation while checking the monitor of a variable biological microscope installed in our company, with the advice of many Toji (the head of the sake brewing site). Furthermore, from this year, we will be conducting observations and analysis using more advanced equipment with the cooperation of public institutions. By making full use of the power of modern civilization, we intend to send out to the world a more reliable version of Japan's fermentation and brewing heritage that our predecessors have passed down through their intuition and experience.
