When you first see the crystal-clear broth, you may be surprised: "Is this really tonkotsu ramen?" Yes, it is! Unlike the typical thick and cloudy pork-based broth, this is a brand-new take on tonkotsu ramen – a clear broth, rich in flavor without the usual strong pork smell.
The secret to this refined soup is in the meticulous preparation process. By carefully removing impurities and slow-simmering the pork without boiling, the broth is clear yet full of umami. The result is a delicious, light-tasting bowl of ramen that has delighted many customers.
