Roasted coffee beans RoastAgeVintage Brazil Peaberry Amarelo Bourbon (W). We are planning to release three items: 200g, 500g, and 1kg (500g x 2). Originally, coffee beans are the seeds of a fruit called coffee cherry. Flat beans contain two flat seeds like peanuts, but 5 to 15% of the beans from a single tree contain only one peaberry (whole bean). This rare bean is said to have a condensed flavor because it contains a lot of oil and minerals. It has the advantage of being easy to roast evenly, and the sweetness is enhanced by carefully roasting it to the core. Peaberries, which can be enjoyed not only for their monotonous bitterness but also for their sweetness, have been aged carefully to create a "roasted coffee bean that is unlike any other." When good quality green coffee beans are purchased and roasted to the core, they can be aged for a long time. Coffee beans that have been roasted to perfection can be aged for as long as six months to become RoastAge🄬. The corners are removed, and the roundness and fullness of the coffee is increased. After about a year of further aging, the beans are called RoastAge®Vintage.
This overturns the conventional wisdom in the roasting industry that freshly roasted coffee beans should be consumed as soon as possible.

Development Story
We purchase high-quality raw beans, carefully remove any defective beans, and roast our original home-roasted coffee beans thoroughly in a 10kg roaster. After that, we named the beans that are left to rest for about six months as "RoastAge®", and the beans that are left to rest for another year as "RoastAgeVintage". Coffee is something to enjoy as an extract. If possible, we would like you to taste the coffee brewed by roaster AKIRA TANAKA in our store, but these are special coffee beans that we would like coffee lovers all over the world to enjoy by carefully brewing them.

Only the beans are served, as they will not mature if ground into powder and will begin to deteriorate.

■ How to Use
RoastAgeVintage is a super-aged bean and contains a lot of oil. In order to dissolve them, the water temperature should be as high as possible. (This extraction method is not suitable for freshly roasted or shallow roasted beans.)

In addition to operating as a coffee shop, we also sell our own roasted coffee beans, coffee gifts, and hold coffee classes. Our RoastAge® is coffee beans that have been perfectly roasted and aged. RoastAge® is particular about "sourcing good beans" - we source excellent raw beans directly from trading companies. "Hand-picking raw beans" - defective beans that cause a decline in flavor are manually removed when the beans are raw. This is because defective beans can be mixed in with good quality beans. "Roast degree adjustment" - In order to find the best roast degree, we repeatedly adjust the roast degree and cupping to determine the roast degree that gives the best taste. 
 "Hand-picking roasted beans" - After roasting, we hand-pick beans with uneven color to create coffee beans with a uniform roasting level. "Maturation" - The commonly used term is aging, which is a method of aging raw beans. Our aging method is a method of aging in which beans that have been thoroughly roasted to the core are slowly aged according to the season, temperature, and other conditions. We deliver high-quality roasted beans to our customers (coffee freaks).
