What is Agodashi?
In Hakata, "Ago" refers to flying fish, which are prized for their rich umami flavor. There’s even a local expression, "It’s so delicious, it’ll make your 'ago' (chin) drop!" This reflects just how special flying fish stock is in this region.

Premium Ingredients:
We’ve selected only the finest ingredients, blending Nagasaki flying fish with katsuobushi (bonito flakes) from Yaizu and dried sardines from Kumamoto. Additionally, we’ve added dried kelp from Rishiri, Hokkaido, and shiitake mushrooms from Miyazaki to create a perfectly balanced, full-bodied dashi.
