In Hakata, "Ago" refers to flying fish, which are prized for their rich umami flavor. There’s even a local expression, "It’s so delicious, it’ll make your 'ago' (chin) drop!" This reflects just how special flying fish stock is in this region.
Premium Ingredients:
We’ve selected only the finest ingredients, blending Nagasaki flying fish with katsuobushi (bonito flakes) from Yaizu and dried sardines from Kumamoto. Additionally, we’ve added dried kelp from Rishiri, Hokkaido, and shiitake mushrooms from Miyazaki to create a perfectly balanced, full-bodied dashi.

Flying fish offers an intense umami flavor, but its fattiness can sometimes create a strong odor. That’s why we carefully selected smaller, leaner flying fish from Nagasaki to achieve a cleaner, richer taste.

We enhance this natural flavor by blending it with glutamic acid from kelp and guanylic acid from shiitake mushrooms, creating a deep, multi-layered umami experience.
